If you want to put calls on the air, the majority of the late model IP desk phones by the big three (Avaya, Cisco, and Polycom) have a 4 position, modular jack to connect a headset, and a fixed-feature button to activate the headset
When you press the above button, it moves the audio path from the handset jack to the headset jack.
The Polycom headset interface adapter (2201-33206-001), provides a 600 ohm, balanced line-in & line-out on phoenix connectors, and can interface to the above headset jack. On the big auction site for under $20
